Update the What's New notes for v5.0.3

ReleaseNotes.json had been pinned at 5.0.0 through both 5.0.1 and 5.0.2, so
the What's New sheet, which renders notes.version verbatim as its header,
announced a version three releases behind the running build.

The highlights cover what a user can actually observe since 5.0.0: the moved
support and documentation links. The launch fix in this release is deliberately
not listed — it only ever affected builds without entitlements, so no App Store
user encountered it, and claiming a crash fix they never saw would be noise.
